Here is my late mother-in-laws Christmas ice cream.
1/4 pint milk
4oz marshmallows
1tsp cocoa
1 tsp instant coffee
2oz raisins
1oz sultanas
1oz currants
2tblps Sherry
2oz glacé cherries
2oz chopped nuts
1/2 pt thick cream
1oz icing sugar
Mix the fruits wth the sherry and let stand, put milk marshmallows cocoa coffee into a pan and heat until melted, then let cool. Mix in the fruits and nuts. Fold in the whipped cream. Freeze until firm then decorate with cherries and icing sugar. I use a Pyrex bowl lined with cling film them when I turn it out it looks like a round Christmas pudding. I also dribble on melted chocolate.
 
This is an amazingly simple cake, a fruit / sponge hybrid. It's great completely plain, or itcan be marzipanned and iced. You can make it 10 days ahead and feed it brandy, or it's great made the day before. It's a chuck it in and mix recipe with the addition of mincemeat making it lovely and moist. I thought you might like to see the original recipe in the book, as written down by a friend of my mum's nearly 40 years ago. I worked out smaller quantities in the margins. You can tell by the drips and stains it's been well used! The main stain was me, dripping egg all over it about eight years ago 😂IMG_20200503_124559992.jpg
