@Jelinga - This is for 2- though not overly generous. You could easily do a single portion in a smaller dish. The potatoes are not sliced "mandolin thin" which is what I have tried doing in the past (and failed!), so it just take a minute to peel & slice a person-portion-sized spud. If you can see the video on the page you'll see how they are not too thin.
I have a hideously sharp ceramic blade mandolin, I have cut myself a couple of times on it and I get a bit queasy now when I use it.
